One of my favorite things about Fall is the change in what we eat. While I love to grill out, as soon as there’s a nip in the air I’m pulling out the soup recipes.
I have no problem eating soup all year round but my family pulls a big veto on eating soup in the summer. So I eat soup for lunch and patiently wait for Fall to pull out Soup for Dinner.
I’ve been making these for several years and they’re still a crowd pleaser and a favorite.
This HEARTY and HEALTHY SOUP (first two photos) is truly both Hearty and Healthy. I’ve made this vegetable filled soup in both a slow cooker and stove top and it’s delicious either way. You can find all the ingredients and directions here.

Because this soup is a bit more work to make (but oh, so worth it) I’ve never taken the time to take pictures of it. By the time it’s ready all I want to do is sit down and eat!
