2 Delicious Summer Recipes: Grilled Veggie Burritos and Raspberry Freezer Pie

Today I’m sharing two of my current, all-time-favorite summer recipes. Current because you know this kind of thing is always subject to change.

First is The Pioneer Woman’s Grilled Veggie Burritos.

Oh.My.Goodness. These are so good!

Since I found this recipe several weeks ago we’ve had our own, slightly varied, version of 3 times! Here’s how we changed it up a bit…

  1. Since the men in my family don’t consider a meal complete without meat…we added grilled chicken.
  2. Rarely do I have tortillas on hand large enough for actual burritos so our burritos were more like fajitas.
  3. We also added red bell peppers to the mix.
  4. I realized that fresh cilantro makes a H.U.G.E difference to a recipe. Don’t know how I hadn’t truly realized this before now. 
  5. We included this easy salsa and chips with our meal.
  6. Cilantro-Lime rice is beyond delicious!

Grilled Veggie Burritos

What you’ll need:

  • 1 Tablespoon Olive Oil
  • 2 cups Long Grain Rice
  • 4 cups Low Sodium Chicken Broth
  • 2 whole Limes, Juiced And Zested
  • 1/4 cup Chopped Cilantro
  • 2 whole Zucchini, Cut Into Slices Lengthwise
  • 1 whole Yellow Squash, Cut Into Slices Lengthwise
  • 2 ears Corn, Leaves And Silk Removed
  • Olive Oil For Brushing
  • Salt For Sprinkling
  • 1 can (15 Oz. Size) Seasoned Black Beans
  • 6 whole Burrito-sized Flour Tortillas
  • 1 whole Small Onion, Finely Chopped
  • 2 whole Roma Tomatoes, Diced
  • 1 cup Grated Monterey Jack Cheese
  • Optional Toppings: Salsa, Sour Cream, Guacamole, Extra Cilantro, Hot Sauce

Raspberry Freezer Pie

My cousin, Leah, first introduced me to this delicious recipes years ago. It’s a great summer dessert. I prefer raspberry sherbet but this dessert can be made with lime or orange sherbet as well.

Raspberry Freezer Pie

  • 1 – 8oz package cream cheese, softened
  • 1 – 7 oz jar Marshmallow creme
  • 1 – cup raspberry sherbet, softened
  • 2 – cups thawed whipped cream
  • 1 – 9″ chocolate pie crust
  • raspberries – optional

Raspberry Freezer Pie (4)

Combine cream cheese and marshmallow creme. Mix at medium speed until well blended. Add sherbet. Mix well. Gently mix in whipped topping. Pour into pie crust. Freeze until firm. Garnish with raspberries if desired.

I always double this recipe and make two pies at a time. It’s a perfect dessert for just about any summer meal and will keep well in the freezer for weeks. It never lasts that long. But it would if you needed it to. 🙂 A great make ahead recipe.

  2. Oh my, those burritos looks so good. My Mr. C is a “meat” loving kind of guy, so adding the chicken will make him very happy :-}, which in turns helps me be happy! I love fresh cilantro, and can’t get enough of it, fresh herbs really add so much flavor.

  3. First of all it was great to see you at Haven. It was such a fun conference we are already looking forward to next year.

    Now this burrito looks amazing. We belong to a CSA and we are getting so many vegetables and this is a great way to use some of them. I am pinning this and plan to make it this week!
